Test post: strawberry almond chocolate chip muffins

I like to bake, and I whipped these up last night based on a recipe from the Moosewood's new classics, so it only makes sense that this is my test post.


Preheat oven to 350F.

Wet ingredients:

6 T canola oil
1/2 c sugar
1 egg
3/4 c milk
1/2 t vanilla
1 c chopped strawberries
1/2 c toasted slivered almonds
1/2 chocolate chips

Mix oil and sugar. Add egg, mix. Add milk and vanilla and mix until lumpy but well mixed. Add in the rest of the ingredients and set aside.

Dry ingredients:

2 c flour
1 t baking powder
1/4 t baking soda
pinch of salt

Mix dry ingredients in a large bowl. Add wet to dry, and mix until just combined. Add a little extra milk if necessary.

Distribute amongst muffin tins, and bake for 30 minutes.
