This time around we went for a tempura style batter instead of a beer batter, to great results! We did battered shrimp and eggplant wedges, as well as (non battered) fries.
The recipe used comes from Canadian Living, of all places. It can be found on this page here. Instead of setting the batter in a bowl of ice cubes, I just added a couple to the batter and stired periodically. It seems to have worked pretty well, and didn’t thin the batter too much.
